For the lunar year of the Ox, Group Executive Chef Martin Foo and his team of chefs have curated a lineup of dishes for each of the Crystal Jade concepts. Available at all Crystal Jade’s fine-dining restaurants, the new yusheng is named Season of Wealth Golden Scallop Yusheng ($168/$108), prepared with fresh vegetables and fruits, and torched scallop slices with an olive oil dressing that contains flower blossom syrup and plum sauce.

From Crystal Jade Palace at Takashimaya Shopping Centre, the restaurant will be serving several unique creations such as the Crispy Charcoal Grilled Superior Sea Cucumber that’s grilled over binchotan and finished with oyster sauce, and the Braised Vermicelli with Scallop and Egg White with Crispy Conpoy that is served on a paper steamboat over a lighted stove. The neighboring Crystal Jade Golden Palace at Paragon has a lineup of contemporary dishes such as the Roasted Irish Duck with Crispy Rice that has a lettuce cup base and topped with chef’s secret sauce, and this is recommended to be eaten as a one-biter. From Crystal Jade Dining IN at VivoCity, the restaurant will be preparing a Braised Pumpkin Thick Soup with Steamed Egg White, Prawn and Crab Meat as a warm starter.

Over to the Crystal Jade casual dining restaurants such as Hong Kong Kitchen, La Mian Xiao Long Bao & Jiang Nan, you can enjoy Teochew specialties such as the Braised Fish Tofu with Shiitake Mushroom and Black Moss in Oyster Sauce.
