I really appreciate it when fried rice is done well - not mushy at all but fluffy, the kind that you can get a nice bite of every grain of rice! Looks simply fried with eggs and studded with fresh cubes of prawns and scallops, the best part of this dish was not the seafood, but the fragrant XO sauce used to fry it all up. Along with the added umami-ness, the sauce gave a mild spicy kick which made it super appetizing although we were served this nearing the end of the meal. I'm sure I could have finished a bowl or two more then! This $18 portion serves 2-3 pax.
