Like a hardcore triathlete, the "cha siu" here was all lean and dark. Unlike the same said triathlete, it was tender to the bite. The "sio bak" on the other hand, epitomised the skinny-fat model. You know the type - slim and svelte at first glance but untoned upon close inspection. Not that I minded because firstly, I like pork fat and secondly, that crackling skin was noisily crunchy.
