I’m not a fan of the wet style where the sometimes bland noodles are allowed to hide behind a gravy-like sauce. The noodles here are deceptively dry until you take the first bite and realise they have already absorbed all the wonderful flavours of that pork and prawn broth, then you feel foolish. It is then wok-fried to lend some smokiness (all without mushy overcooked noodles), with a supporting cast of pork, squid and prawns all tossed into the mix, complemented brilliantly by a squeeze of lime mixed into the sambal and chilli padi for a spicy slap to the face.
