A hole-in-the-wall Japanese ramen joint serving only 100 bowls per day, Enishi certainly delivered with their concise 2-item menu.

For something rich and saucy, look no further than their award-winning Dan-Dan Noodles ($17.90). Offering a myriad of flavours and textures, the sheer number of ingredients sets it apart from the usual dry ramen variant. From crunchy purple pickled cucumbers to melty cubes of cha shu, punchy diced white onions, seasoned minced pork, Japanese mizuna, and fried onions; the assortment of condiments also complemented one another surprisingly well. Each order comes with an onsen egg, mini rice bowl to mop up the remaining meat sauce and a bowl of warm umami dashi stock served on the side. You can customize the level of spice (zero, medium hot, and very hot) as well. Hence, with so much going on, my favourite component in this dish was the distinctively nutty sauce that seems to meld the elements together after a good mix. Not forgetting the firm al dente noodles which were the perfect medium to grip the sweet-savoury sauce in each slurp.
