OLA Cocina del Mar is helmed by chef-owner Daniel Chavez, who came from 3-Michelin starred "Can Fabes" in Catalunya, where he worked for two years under the culinary legend, Chef Santi Santamaria. He then came to Singapore at Les Amis under Chef Gunther Hubrechsen.

This is a beautifully grilled octopus with rouille sauce and grilled fennel in orange zest. While the accompanying sauces for Chef Daniel's grilled octopus may change from time to time this dish is on solid fundamentals - smoky octopus with succulent flesh with a well balanced sauce with hints of zest and spice.
