For me, I always seek out flavours and dishes that are unique to the locals to open my mind and palate to the culture. Instead of the regular tom yum and green curry, I opted for the Southern Thailand gaeng som (orange curry) with cha om omelette and the jungle curry that’s cooked in an abundant of jungle herbs. The taste might not appeal to all and it might take some time getting used to, but these are the actual flavours that locals love. Be daring, take the road less travelled and be a little bit off the beaten path.
