This is Chef van Oostenbrugge’s iconic and show-stopping Apple. I had seen this online several times, and long wanted to see this with my own eyes. And finally I did, at table65 located at Resort World Sentosa.

You are first asked to break the crystal shell, and yes it'll break your heart too as you destroy this work of art. You can then eat everything inside, including that apple core which is actually crafted from sorbet.. genius right?

The Singapore edition of this Apple came with ginger-poached Granny Smith served with salted caramel, puff pastry and walnut crumble.

You'll definitely want to have this when you're here, and good news is it will be served regardless of which menu you choose, and which dessert in the 8 course menu you pick. This will be served as the finale of the 5 course menu, and the pre-dessert of the 8 course menu.
