The key was in achieving the perfect ratio of crust and meat โ breaking through that crust, your teeth would be warmly welcomed by springy but tender flesh that's accentuated by a gentle fattiness.

It got a tad dry around the leaner edges, but overall a solid texture which allowed the juiciness and robust porcine flavours to shine. A quick swig in their tonkatsu sauce helped to add some vibrant piquancy which made it even more enjoyable by cutting through the heaviness.
