The all time favourite at any tze char stall, the shrimp paste chicken at Tian Wai Tian is prepared using only the mid-joint wings. My favourite part of the wing as the chicken skin to meat ratio is pure delight. The shrimp flavour is not overbearingly pungent and the chicken skin is crisp and extremely savoury. This dish is almost always the first to disappear into our tummies!
