For the best dining experience, the best is to go for the 8-course Tasting Menu, available for both lunch and dinner, which is priced at $140++, with an option to top up $80++ with wine pairing. Prior to the commencement of the first course, you will be treated to a selection of amuse-bouche, which gives you a sneak preview of what’s to come in the later courses. The single bite-sized teaser that left an impression was the Foie Gras Ganache, which was layered onto compressed apple caramel and feuilles de brick pastry, before frozen and shaved green granny smith apples were added as the finishing touch. For the crunch and texture, the other two items of Shiso Tempura and Bonito Rice Cracker certainly complemented each other well. The former was made from deep frying a fresh shiso leaf in a tempura batter and eaten with a whipped mentaiko blend that also contains sourdough bread, garlic, olive oil and lemon juice in it. The latter was a bonito rice cracker that acted as a vessel to hold the dill, cream fraiche and ikura, which had been lightly marinated in soy and mirin; all to be eaten together in a mouthful.
