Part of the $108 or $118 omakase menu, this super sweet Japanese tomato came with pine nuts, pancetta and a reduced sticky balsamic glaze. A fail-safe combination, this is elevated to new heights by the superior produce used.

While i would’ve preferred the pancetta to be in bigger chunks for a greater balance and contrast, this was still super, especially that bomb balsamic glaze.
