Many twists to the good ol' traditional eggs benny here! For one, it's pulled pork instead of ham. Pulled pork was well-pulled, fork-tender and well-marinated. The flavour was intense! The second twist would be the sides - instead of typical salad with garden greens, it's a mix of arugula (wow, bitter!), mixed corns, pinto beans and diced tomato mixed in salsa sauce. The tangy mix was a nice balance to the bitter arugula. For those who prefer additional spice, a dish of peri-peri is provided on the side as well. I particular love how the hokkaido toast was toasted with the pulled pork in the oven before the beautiful eggys were placed on it. There's crunch on the edges of the toast and the beautiful charred strands of pulled pork tasted slightly different from the ones found elsewhere on the bread!! Who wouldn’t wake up to this?
