Even better than what I remembered, the Braised Pork Belly ($10) from The Salted Plum, brought to us by the same folks behind the now-defunct Five Ten, was beyond good! Braised well into the dark, intense gravy, each serving comes with two generous and fork-tender hunks. The rich and robust flavour of their special spiced-enhanced haus saus was also sticky sweet without being jelat. And of course, it is all that fat and collagen that makes it what it is. So a truly sinful dish, just enjoy the melty and succulent slabs bestowed upon us - especially the beautiful layer of fatty skin that I can't stop eating. No fits of guilt for me as I drizzle all that goodness on my bowl of shiny rice.
