The quintuple set ($68) consists of the Lacto-Fermented Pineapple Galette, a homage to the pineapple tarts, and this is made from a flaky galette pastry with demerara sugar, pineapple jam and layered with fermented pineapples that has been grilled and glazed with pineapple juice. The finishing touch is topped with locally sourced cress and a dollop of crème fraiche.

Another key component of the lunar new year is the kumquats, and the patisserie has baked a Kumquat and Sea Buckthorn Danish made with a sourdough base and glazed with vanilla, apricot and topped with mandarin custard and semi-dried confit kumquat slices for that balance of sweet and tarty flavour. A popular snack that many munches on during visitations are hae bee hiams and the Hae Bee Hiam Laminated Donut Roll in this set is filled with a hae bee hiam cream cheese custard, rolled in with parmesan and shrimp floss, topped with crispy fried shrimp. One bite of this and you will keep going back for more.

The final two pastries, the Sweet Potato & Yuzu Brioche Bun and Chrysanthemum & Pear Custard Flan round up the quintuple set. The former is filled with a yuzu jam and brown sugar nutmeg cream while the latter is filled with a chrysanthemum and vanilla infused custard that is then topped with a pear, ginger and mascarpone cream. A decadent treat that pairs well with a cup of afternoon tea.
