Durian season may well be over, but there isn’t a need for an occasion for a bowl of quality durian mousse. While it’s all creamy and rich with a whiff of pungent durian going through the entire bowl, the good stuff is at the bottom; we ain’t talking about fibrous shreds of durian flesh here, but the smooth, creamy durian pulp that is fresh off the fruit which enhances the flavours further. It ends off on a very clean note; no nasty aftertaste that lingers — very well-executed.
