Hainanese chicken rice is a Singaporean and Malaysian colonial dish that was created by the Hainanese community who use to be caretakers of the British colonial era. This dish consists of boiled chicken known as white cut chicken 白切鸡, and is served with a side of dark soy sauce, ginger and chilli sauce.

The rice was flavourful and rich in flavour, with the chicken cooked tender, especially for the lean meat. The pickled vegetables on the side added a nice sweet salty punch. Add a portion of the liver which was cooked perfectly and served warm, while the gizzards are also cooked soft. You can see why this hawker stall earned a Michelin Bib Gourmand.
