The eel has light smoky notes with bold sweet savoury salty flavour, while the lettuce contrasts with bright vegetal sweet notes and the egg holds mild eggy sweet flavour.

While the crisp raw alfalfa sprouts has sharp vegetal bitter herbal flavour (I set it aside), the crunchy pickled daikon radish is nicely sour sweet in taste.
