𝐇𝐢𝐭𝐬𝐮𝐦𝐚𝐛𝐮𝐬𝐡𝐢 (4 ⭐️; $35/M; $48/L) - Enjoy the eel three ways, with my personal favourite being with their flavourful dashi broth. The eel pieces here had an enjoyable light char and were on the leaner side, resulting in tender but less juicy bites. In comparison, the no-frills 𝐠𝐫𝐢𝐥𝐥𝐞𝐝 𝐞𝐞𝐥 𝐰𝐢𝐭𝐡 𝐬𝐚𝐮𝐜𝐞 (3.5 ⭐️; $33/M) was a fattier and juicier cut. The light glaze of their homemade sauce provided a savory-sweetness while still allowing the natural fishy flavours to shine through.
