We were invited for a media tasting one fine evening and we left feeling satisfied and full of praise from the dishes that he has prepared. These were a showcase of his culinary journey and recipes that has been passed down from his family. It’s hard to choose a favourite but if I have to choose, I will go with the Chef J’s Signature Brandy White Fish Soup ($9.80); a bowl of collagen-rich soup that’s made from hours and hours of simmering the fish bones with no added milk/creamer into it. You can instantly feel a sense of warmth and comfort from the first slurp and each bowl comes with slices of white fish, cabbage and Shimeji mushrooms. Do make prior reservations for the soup, as it is limited to 20 portions a day.

Besides the soup, there are a variety of dishes that you can get from the menu such as Chef J’s BBQ Pork ($14.80), pork slices that has been grilled to charred and serve with a special sauce, Singapore Style Chill Prawns ($18.80) that’s cooked in a chilli crab sauce which you can add $2 for 4 mini mantous to dip the sauce in and Chef J’s Te Kar Bee Hoon ($12.80), a family recipe of braised pork leg wok-fried with rice vermicelli. To balance the meal, do consider the Ugly Cabbage ($9.80) for an excellent and addictive stir fry of cabbage in fish sauce and if you come in a group, there’s the highly recommended Whole Sea Bass ($31.80) that’s deep fried and served in a Thai-inspired Assam broth.
