Head Chef Taro Takayama’s background in the more formal style of Japanese cuisine is on full display with every dish that’s served. This Seasonal Otsukuri, one of the courses included in the Lunch Set, is a perfect example. The sashimi that I had on this occasion was also extremely fresh and of excellent quality.
