While this wasn’t a hot favourite of the night, the use of nagaimo (Japanese yam) for the espuma was rather unique. Although there wasn’t much flavour to it, the slimy texture was peculiar. Made with cold somen, herbs diced chicken breast, nitamago, ikura. Overall impression of the dish was a clean eat, but the best part was the shoyu goma and vinegar mix dressing as it wonderfully imparted a fragrant nutty aroma to the noodles.
