The duck is marinated in a mix of Balinese herbs and spices for a day. It is then fried till the skin is crispy and the inside still tender. Diners have 3 choices of homemade chilli sauce, namely Sambal Matah, Chilli Vinaigrette ($26) and Sambal Hijau. I have my duck with the tangy chilli vinaigrette which goes really well with the crispy duck, elevating the whole enjoyment.
