You could trust the team who came up with the menu for Tanuki Raw to do an innovative sushi such as this. Char siew on sushi, and a spicy one too. I was apprehensive, but I gave it a go and I loved it.

Nagano pork was slow braised and charred, then glazed with house blend spicy miso. As with all their sushi, it's served over their signature sumo style sushi rice wrapped in toasted seaweed.
