They certainly like their interpretations of classic desserts at Aura, and the Blackforest Fleur de Cao is a shining example of when deconstructed dishes can work. The lustre of the chocolate sorbet quenelle sequestered amidst chocolate soil immediately draws one’s eyes in, and taking a bite of it immediately confirms your first impressions of how chocolatey and creamy it is. The intensity of chocolate carries on with the substantial chocolate cake sandwiched between layers of tempered chocolate and a large-sized piece of chocolate “bark”, all counterpointed nicely by the sweet and slightly tart morello cherry sauce.
