A little throwback to the day before Singapore entered Phase 2 Heightened Alert where Art’s Four-Course Executive Lunch ($58/ per person) was (one of) my last hurrah.

Starting strong with their warm sourdough and amuse-bouche, the lunch set was quite a treat with more hits than misses for me. One of my favourites from the small line-up was the lovely chilled Asparagi di Spagna (Spanish Asparagus). A delicate dish that came right after the amuse-bouche, the chunks of torched chutoro tuna was meltingly soft, and sitting at the base were cubes of tender white asparagus custard as well as savoury horseraddish essence. Hence, the crisp chips at the top were a nice addition as they provided that contrast in texture.
