With the addition of beef tripe, the first spoonful of the mee soto seems slightly underwhelming but you mix in the chilli and black sauce, it transformed the noodle dish entirely and the flavours were elevated with the spiciness and umami-ness from the condiments. The broth had the spiced kick, making it very slurp-worthy. However, what truly stands out is their charcoal grilled meat-on-stick aka satay as not only do you get the nice charred bitterness and the turmeric marination, the accompanying chunky peanut sauce is the perfect complement to the satay.
