This is the dish that I'm still thinking of even after I've returned for a while. You know the wood which sushi chef use as a cutting board to slice their fishes? It's everywhere in this dish. In Japanese cuisine, the natural scent of Hinoki is said to counteract with the fishiness, thus improving the appetite and making the meal more enjoyable.

The chef here used the bark of hinoki and infused it everywhere in this dessert. So while I've tried other desserts using one key ingredient in various textures, this was thus far the most unique one for me - hinoki in various textures. The fragrance of hinoki throughout this dessert was calming yet mind blowing.
