When first pulled out of the fire, the leek is unrecognisable. Then, knowing hands enter frame and briskly strip off the outer charred blackness revealing a gleaming and moist centre that's incredibly sweet and juicy. Upping the stakes in gastronomic ecstasy is what comes next. After being cut into big sections, the leek is covered in ultra-fragrant melted brown butter, smashed capers and toasted whole hazelnuts. Honestly, my first bite of this left me speechless.
