This was like the Japanese version of bibim-naengmyeon (Korean spicy cold noodles! Chilled buckwheat noodles, cucumber, kimchi, lots of seaweed and a spicy sauce to mix everything in. I still prefer naengmyeon for how refreshing it is but this works pretty well too with its chewy noodles and sourish kimchi. Wasn’t too spicy!
