This is my first time trying Teochew-style beef noodles. The Dry Mixed Beef Kway Teow with Tendon ($6) from Empress Place Teochew Beef Kway Teow (#01-43) is tossed in chilli and sesame oil instead of the usual thick gravy - I find it fragrant and delicious! The beef slices, tripe and beef balls are tender, fresh and they go well with the chilli, though I felt that the chilli could do with a little more acidity. The tendons are very soft, almost like a jelly that melts in your mouth. The beef broth that is served at the side is sweet and rich. Good stuff👍🏻!
