The sweetness of the prawn is elevated with the seasoning of seaweed salt and pepper, finished with sakura ebi for an explosion of flavours. I thought a sauce may further liven the whole experience. Not forgetting the deep fried prawn head with its creamy roe inside. It is probably the most delicious part of the tiger prawn.
