We ordered the sour version because it could help to reduce some crazy spicy taste

The chef lightly fried the fish so that it could maintain its shape after some simmering (And covered any bad fishy smell)

We could some sides - sliced potato, beancurd, sliced louts and vermicelli. We didn't like any additional meat because we didn't want to introduce any other flavors. Meat didn't really absorbed the spicy sauce. .

Some guilds to eat this
1. Root veg like potato takes longer time to cook than expected.
2. Food which look a sponge, e.g beancurd, longer it cook better it taste.
3. Food like noodle must eat once it is cooked. If not it will thicken up the sauce and turned everything mushy. .
