I have not had Sugba Kilaw ($19.50) before and I’m so glad I tried it. This dish is Philippine’s version of ceviche and it comprises of grilled pork belly on top of a bed of cured raw Mackerel with ginger, onion, green chilli, lime and vinegar. The pork belly has a good balance of fats and meat, is grilled to perfection and it goes very well with the tangy and refreshing cured fish. I give this an A for Appetising!
