The unique trait of the restaurant is that each skewer is marinated overnight and grilled upon order with an inhouse seasoning blend. When served, the skewers are placed over a griller that is specially imported from China so that the food remains hot throughout the meal.

To go alongside your BBQ skewers, Hutong has also created a highly dramatic dish in the Mala Xiao Long Xia with Maotai ($38.90), whereby the baby crawfish are first stir-fried with a blend of aromatic mala spices before being transferred onto a bowl. The bowl is then served to tableside before the wait staff will pour a shot of Maotai over the dish while lighting it up for a flambéed presentation. The alcohol in the Maotai will be burnt off, lending a sweet note to balance out the spicy savory flavour of the dish.
