I have said this before and I will say it again, the 3–course Set Lunch at Spago at $45++, is extremely worth it.
Supporting my above statement is the Pate de Campagne. It is an option amongst a total of four appetisers in the set lunch menu, and has the hefty slices of country terrine-style pate served with pickles, both of which are made in-house by Chef de Cuisine Greg and his team.
I love that the seasoning in this was spot-on and texturally, it had a robust chunkiness, thanks partly to the presence of pistachios mingling with the meat. Supremely satisfying stuff.
