Bright and sourish, the Malu Baduma ($36) was a favourite at the table. A deep-fried jade perch in a yellow sea of turmeric leaf curry with a small heap of fresh pomelo salad placed in the middle. Like a lighter version of Assam curry that we are familiar with (due to the use of tamarind and mixed herbs), the dish had a refreshing spicy-sour tinge that would go well with a bowl of hot, steaming rice. The fish was flakey fresh and it was fun munching on the crispy fish bones. However, the heat comes a tad more quickly so thankfully the sweet pomelo offered a bit of relief.
