Served on a bed of fragrant basil couscous, the Barramundi was accompanied with fresh heirloom tomato salad and braised shallots, then drizzled with basil oil. The huge slab of barramundi was fresh and simply grilled till the skin was crisp. This is a hearty and refreshing dish that’s light on the palate.
