Using a recipe from his grandma, Chef Joel has created a delightful dish.

The pork trotter was braised to perfection, with none of that ‘porky’ smell and it was so succulent and tender that it melted in my mouth. The wok fried vermicelli tasted great too; it had a great flavourful bite with all that wok hei. Together with the accompanying savoury sauce, this dish was an absolute treat.
