An exquisite surf & turf dish with well-balanced savoury tastiness from the cured ham and delightful sweetness from the fresh succulent fish. 😋 Spread that smooth parsnip puree for every mouthful as it adds a nutty taste with some earthy notes. I expected a stronger floral flavour from the highly anticipated saffron foam but the taste and aroma were too subtle to make a point. 😉
