The Crispy Calamari ($21) came with a light batter that remained crisp even after delivery. The calamari within was soft, and was served with sumac and sun-dried tomato aioli.

The Casarecce ($27) tasted way more delicious than it looked. Al dente pasta with a delicate aroma of black pepper, tossed with guanciale that provided the savoury flavors, perfumed by saffron.

The two pizzas were Broccolini, Pancetta, Pumpkin and Smoked Mozzarella ($28); and Stracciatella, Prosciutto, Rucola and Fig Vincotto ($32). Amò makes one of the best pizzas around. It has a light crust, made with natural leaven, semolina and extra virgin olive oil.

The Butter Roasted Spring Chicken ($35) arrived with a beautiful char on its skin, delectable with the juicy flesh within. Rosemary jus was served on the side, to be poured over when you're ready to eat. Served with sliced Roman potatoes.

I was impressed with the meal. It's said that at Amò, authentic traditions meet modern techniques. Indeed, these are classic Italian dishes, refreshed with a modern touch.
