Glazed with pommery mustard and nicely nestled in a bed of mashed potatoes, the pork secreto ($26) is one of my favorite dishes at Porta. Beautifully charred and tasting gloriously of itself, it's super fatty and rich but the tartness of the accompanying mash balanced the flavors wonderfully.
