Another one that I really liked was this cured tuna piece. The curing process imparted an intense saltiness to the already rich tuna umami — quite a potent dose of flavour. However, this allowed for some elegant interplay with the vibrant citrus, which did not merely cut through but also accentuated my enjoyment of the heavy flavours.
