Now that the surf’s done, turf’s up. The Wagyu Saikoro Cube Steak ($20++) is utter beefy bliss encapsulated in a small, terrifically tender cube. Saikoro steak is usually beef tenderloin that’s been diced into cubes for quick frying, and it apparently means ‘dice’ in Japanese. Tenderloin is already plenty tender, but wagyu tenderloin? ⠀

Oh boy, these little cubes of meaty heaven melt in your mouth like ice cream on a hot day. One kiss is all it takes for a certain singer, but for these beef cubes, one bite is all it takes. The divine cubes of beef are dressed in a ponzu sauce, which slices right through the buttery, beefy, fatty richness of the wagyu and adds zest and even more sapidity to it. These beef cubes are so supremely sublime that a single order ain’t enough to satisfy the need for this divine bovine.
