Would it be a heresy to say that char kway teow is not oily at all ?
This is my papa’s favourite char kway teow and I can see why. It has such a well balanced and deep ( hum) flavour without being overly sweet or salty. It was definitely not oily ( How is that even possible ???🤪)
The Kway Teow was also QQ and there were little fried lard bits within the kway teow that added a nice Smokey flavour :)
You can request for your plate of fried kway Teow to be “ cooked by water 💦 “ .. they call that “ Sui Cao “ in Cantonese meaning using water to “ fry”.
The queue moves fast so don’t be disheartened when you see a long queue .
