I am agreeing with the replacement of the usual thick bee hoon with the thin bee hoon. I find that the thin bee hoon holds the prawn stock and all the umami goodness better .
I first tried yi hi fried Hokkien mee at their old airport stall and mind you - there are 2 of them there - looking 99 percent identical - one of those issues in food foes and woes again.....
No confusion here at albert food centre because there’s only one of them here .
I call this the healthy fried Hokkien mee - because you literally can’t taste any greasy-ness ... it’s a wonder how they do it ...
I like how the stall claims they don’t use msg at all .
The chilli was such a bomb .. it lends so much character to the dish. Very spicy 🌶 .....
My only gripe is the use of crab sticks in the dish .. for what har ? 😂
Otherwise a very fine plate of fine fried Hokkien mee ... not the usual kind but my kind 😊.
