Putien is still serving these succulent DuoTou clams, and I really think any Putien fans should try at least one of their 8 clam dishes. I didn't realise how plump, fresh and juicy they were until I tried them.

These clams dishes are here only for a limited time, because mid-spring was the time of the year which gave the best harvest of DuoTou Clams, freshly air-flown from the coastal town of Putian.

Pictured is the Stir-fried DUOTOU Clam with Ginger and Spring Onion. I was told it can be found in most homes in Duo Tou Village, as stir-frying is a common cooking method in China. The beautiful aroma from this home-style cooked dish lends extra comfort when eaten with a bowl of warm steamed rice.
