Their specialty may be their Signature Soup which is slow-brewed without MSG, dairy, or preservatives. However, I very much enjoy Milkfish’s Grilled Milkfish Belly ($19/ ala carte, $23.80/ set) and sides more. Well-seasoned, the grilled fish was pleasantly savoury. For that extra oomph, the protein also worked superbly with the dipping sauce. I liked that it didn’t feel too dry as there were some fatty bits in the center (think collagen) yet it wasn’t jelat for me (you can then use the wedge of lemon on the side to freshen the palate as well). Overall, there were some fine bones as expected and the tender flesh does remind me of a more fleshy saba fish.

If you want to sample a little of everything, their Combo for 2 ($40) was good for 3 pax. A fairly decent bowl of fish soup, the Milkfish Soup was refreshingly light and sweet. Served with sliced red snapper fish, prawn, clams, tofu, vegetables, and a housemade minced pork patty; the broth tasted ‘clean’ and load with collagen. Surprised that no milk was added to their soup at all, I prefer a more flavourful punch so their rendition felt a little flat for me.
