It's called Birch, not just because it is topped with crunchy cookies that looked like birch leaves. This is made from 3 components of the birch tree - the wood, the leaves and the sap. The base of this dessert is a ganache made from chocolate and birch leaves. In the middle layer is jelly made from by toasting birch wood before incorporating it into jelly, while the syrup he's shown pouring here is birch sap reduced to a thicker consistency.
