Introducing rice and salad bowls is a smart way to entice the health conscious CBD lunch crowd at the newly opened Cuba Libre in Frasers Tower. The Latino inspired flavours are fresh yet punchy, with ingredients such as a moerish Arroz Moro(black beans and rice), crisp plantain chips and guacamole. In particular, I liked the Cuban Bowl with a well-seasoned roast chicken quarter, as well as the savoury fish Escabeche smartly paired with tart pickled onions, roast capsicum and corn chips in the Peruvian Bowl. The vegetarian options are substantial too, with the Verduras bowl laden with avocados, chickpeas, pilaf rice and butternut squash.
